Cold extract 750 ml from Valdibella

Extra virgin olive oil produced in western Sicily, Cerasuola variety cultivar; the olive tree is grown on the hills to avoid water stagnation on soils of various kinds, generally medium-textured with a good clay content.

It has a significant longevity of the qualitative characteristics and has the highest polyphenol content.

 

::- Cultivation technique -::

We apply cultivation programs to increase biodiversity and minimize tillage. We practice the shredding of pruning residues and leguminous green manure. Generally we do not practice any insecticide or fungicide treatment. Sometimes it is necessary to intervene against the peacock eye and in this case we practice an intervention with copper-based products, while against the olive fly we practice repellent interventions with kaolin or agricultural chalk.

Pruning and suckering, on the other hand, are practiced every year. The harvest is manual and takes place at the beginning of veraison; it generally falls between October 10 and 15 and lasts until November 15-20.

The ideal moment is when the percentage of green olives is at least 70% of the total.

 

::- Method of extraction and storage -::

The extraction takes place within twenty-four hours of collection, strictly cold with temperatures below 27 °C. The extraction method is a continuous cycle.

Conservation takes place in steel silos, in a cool place. The oil is decanted naturally and unfiltered. It takes on a green color with golden reflections, with an acidity of less than 0.3%.
